ALTOS x PERNOD RICARD

Altos × Pernod Ricard was a creative exploration focused on reimagining one of the most iconic cocktails in contemporary mixology: the Paloma.

Developed around Olmeca Altos Tequila as the central protagonist, the project sought to deconstruct the traditional cocktail and reinterpret it through the lens of gastronomy, sensory design, and premium cocktail culture. The challenge was to preserve the essence and recognizable identity of a Paloma while transforming its format, textures, and ritual of consumption.




The creative process involved extensive experimentation with culinary and mixology techniques, including foams, spheres, cordials, flavor extractions, and texture transformations. Every element was carefully reconsidered to elevate the drinking experience while maintaining the balance between tequila, citrus, freshness, and bitterness that defines the classic recipe.



Beyond the liquid itself, the project also explored the role of the vessel and presentation. Alternative glassware formats and serving rituals were developed to reinforce the premium positioning of the proposal and create a more immersive and memorable experience.


The result was a collection of concepts and prototypes that culminated in a final signature recipe selected by Pernod Ricard as part of a bartender training programme. To accompany the launch, a bespoke presentation box was designed containing all the ingredients and components required to recreate the cocktail, transforming the recipe into a complete educational and experiential kit.


The project demonstrates how innovation in mixology can emerge from the intersection of gastronomy, design, and storytelling, creating new ways of experiencing classic cocktails without losing their identity.


OBJECTIVE

Creation of a premium reinterpretation of the classic Paloma cocktail, using Olmeca Altos Tequila as the central ingredient while exploring new formats, textures, techniques, and serving rituals.
RESULTS

Development of a signature cocktail proposal combining gastronomic techniques, innovative presentation formats, and a custom-designed preparation kit, later incorporated into a Pernod Ricard bartender training programme.
